Baked French Toast with Blueberry Sauce

We have a WINNER!

1/4 c. melted butter
4 eggs
1 c. milk
1 tsp. vanilla extract
1/2 tsp. nutmeg
8 slices Texas Toast

Blueberry Sauce
1/4 c. sugar
1 1/2 tsp. cornstarch
1/4 tsp. cinnamon
1 1/2 c. blueberries
2 Tbsp. orange juice

Pour melted butter into shallow baking dish (I used my large stone bar pan by Pampered Chef -which I LOVE!), evenly coat. In a large shallow bowl, whisk eggs, milk, vanilla, & nutmeg. Dip both sides of toast into egg mixture & place in baking dish. Bake at 375 for 20-25 minutes or until lightly browned.

In a large saucepan, combine sugar, cornstarch, cinnamon, blueberries, & orange juice. Bring to a boil. Cook & stir until thickened. Serve over French Toast.

Sprinkle a little extra cinnamon & confectioner's sugar on top.
